November 23, 2020Distilleries have begun to dip their hands in the waters of cask finishing their bourbons. By doing so, bourbons now have a whole new profile of flavors to collaborate with. Angel’s Envy and a local favorite of the RMBC Crew, Breckenridge Distillery, have really dived in with their Port finished bourbons. Whether using ruby or sherry port casks, the bourbon is accompanied by a sweet fruity flavor with notes of sherry or port that are faint, but detectable. Breckenridge Distillery has also recently experimented with their rum aged casks. Although a riskier option, as rum casks can provide a variety of flavors, these two spirits pair nicely to offer a variety of sweet and spicy fruits with subtle notes of chocolate and allspice. Bourbons finished in wine casks, typically cabernet, have also hit the market. Jefferson’s Reserve and Bardstown Bourbon are a few distilleries known to have a delicious wine finished bourbon. The wine casks help in offering more hints of oak and fruit flavors that pair well with the typical vanilla notes from bourbon. Port, Rum and Wine casks are just the beginning of cask finished bourbons, as there are a wide range of different casks to choose from to add some flare to a simple bourbon.
