Old Elk Bourbon Barrels
A unique, local, and fast selling product. These barrels are different from the rest due to the distillery proofing process trademarked as Slow Cut. This process includes proofing the bourbon for weeks instead of the usual 24-48 hours. Smaller amounts of water are also added at a time to ensure the water stays cooler.
Cooler water keeps flavors that would normally burn off if the water were heated. Also different from the rest, the recipe includes 4 times more malted barley. More barely helps to give the bourbon sweeter flavors which include vanilla, clove, hints of maple, almonds and even coconut.
