Tawny Port Barrels
Tawny Port is a blend of all sorts of older wines. It is typically aged 3 years or more. The number on the label (10-year- old tawny, 30-year- old tawny) is the average age of the port inside the bottle. When we buy Tawny Port casks they are much older than Ruby Port casks. Tawny port has much more earthy characteristics of resin, dark fruit flavors, coffee, vanilla.
Port is made from a large selection of different grape varieties. Once harvested at proper sugar level, they are crushed and fermentation is started just like normal red wine. Fermentation is purposely stopped with the addition of a neutral tasting brandy. This halts the fermentation so that there is quite a bit of residual sugar left, which is why port is sweet.
