Oloroso Sherry Barrel
Made famous by Scotland when they use these to age very fine scotch. Extremely oxidized flavors. Very dark, dirty and complex flavors. Oloroso sherry is a fortified wine (brandy is added to stop fermentation) made in Jerez, Spain. The wine is exposed to air inside of the barrel which gives it oxidative characteristics. The wine is very dry (try some) and has very “dirty” raisin like characteristics. Oloroso is not sweet, it’s dry. 17-20% alcohol. These casks were made famous in Scotland by finishing some of their top scotches.
