1/2 cups of bourbon

8 wt. ounces of dark chocolate containing 60% of cocoa
Method:
Remove the seeds from the cherries. Soak the cherries in the bourbon for about a day. Remove the cherries and place them over a plate covered with paper towels. After the cherries are dried, dip them into melted chocolate. Maintain the temperature of the chocolate at 88 and 91 degrees. Allow it to cool for 2 hours.
2. Bourbon Chocolate Eggnog

2 oz finely chopped dark chocolate

1 tsp cocoa powder

2 cups eggnog

1/3 cup milk

4-6 oz bourbon
Method:
Melt the dark chocolate, milk, and cocoa powder in a bowl. After the chocolate has melted, whisk the ingredients together and let it cool. In a mixer beat the eggnog for 5 mins and slowly add the prepared mixture into it. Whisk it for a minute and add bourbon to it. Chill for an hour and garnish with shaved chocolate.
3. Chocolate Bourbon Truffles

8 ounces of semi-sweet chocolate

1/4 cup heavy cream

1-ounce bourbon

Cocoa powder or sprinklers for garnishing
Method:
Heat the heavy cream in a bowl for a minute (don’t overheat till you get bubbles). Let it cool for some time and pour it into the bowl of grated chocolate. Stir it thoroughly till no lumps are found.
